Unwanted default fonts for E-mails

I compose in Word 97 then send to Outlook 2002. If I
format in Rich Text the font defaults to Arial and if
to HTML to Times New Roman.

My selected font is Trebuchet which appears in my Outlook
set-up. How can I ensure that Rich text or HTML defaults
to my chosen font ?
