User Defined Fields

I have created some User Defined Fields are created in Outlook.

I need to be able to export these to an Access database, either directly via
the Export option or by Linking from the Access db to the Outlook db.

The problem is I cannot find the relevant fields on the Outlook db. Does
anyone know where this data is stored and how I can get at it.
