Using office 2003 in a terminal services environment

I have a few niggly problems using the office 2003 suite over a terminal
service network. I shall try to give as much information as possible.

We have Windows server 2003 running in application mode for terminal
services. Office 2003 is installed, and works correctly when run locally on
the server.
We use HP thin clients with auto logon scripts that redirect all the users,
"my documents" and "Application data" folders to a central file server.
However there are a few odd problems, the main one is that excel doesn't
select the correct currency symbol when working with monetary figures. It
defaults all the cells to $ not £. I realise that Excel gets this information
from the local information on the system it is installed on. The server is
set to UK and does select £ when the application is run locally, the
terminals are all set to be UK input locales as well.
This is causing a few issues with our finance dept who have to constantly
alter each and every cell they are working on.

Possibly related is all the office applications don't save the recent file
list as seperate users, all users see the same last 4 files that were opened
using termianl sessions. Also the applications don't seem to close down the
sessions correctly and recovered documents appear every time an office
application is opened, every document created by every user appears in this
list, the username attached to the documents is always "user". It appears if
the office state software is not functioning correctly.

Any help on this issue would be greatly received. Thank you.
