Using Outlook as work tracking software

Work comes into our department as e-mail requests and is returned as replies
to those e-mails.

Currently each case is also manually input into a spreadsheet so that
statistics can be collated (eg how long each case took, how many of each type
of request we received each month, who did each case, "age profile" of
outstanding cases etc).

Is there any way to get such statistics directly from Outlook 2003 so as to
eliminate the time-consuming logging on and off process?
