Once I have received my responses to my initial email, and the responses are
being shown in the tracking tab of the original sent message, is there a way
to send/export the responses to Excel?

Try this, it may work (I can't test it as I don't have responses to a vote
in front of me):

highlight the table of responses, drag to and open Excel sheet and drop it.
