How do I stop URL's in text within Powerpoint from changing colour
automatically?

Tools menu > AutoCorrect Options > AutoFormat as You Type Tab:

Uncheck the box for "Internet and Network Paths With Hyperlinks"

Also, whenever Microsoft Office does something to you (like changing your
numbering style in Word when you want to type your own number), you can
always go the Edit menu and choose Undo to undo it immediately, but it
won't change the intrusive behavior for the future. For that, you need
the AutoCorrect Options as described above.
