What is the purpose of the message expiry option?

Does the choice of a number of days in this section mean that my email
messages are merely removed from the mail server of whatever service I am
using for my receiving emails? I believe that is right but just need some
assurance. Also is there a choice for me to leave the emails on the server
indefinitely (subject to server size) to be removed by me manually at my
option.

Yes - your emails will still remain in Outlook.
Yes - tick "Leave a copy of messages on the server" and untick the "Remove"
options

I am running Outlook 2007 on Windows Vista Home platform and I could not find
an option to tick "Leave a copy of messages on the server" and untick the
"Remove"
options.

Please advise.

The options are located under Tools/Account Settings/Change/More
Settings/Advanced/Delivery - this is the section that deals with leaving
messages on the ISP server including those in relation to your original
question. Accordingly, in your original question you must be referring to
something else - possibly the "Expires After" delivery option for an
individual email, however, this option refers to dates not days.
