Whats the latest release number for Enterprise Project Server?

We are just about to load up ProjectServer and want to
confirm we have the latest release.

It's difficult to say what the latest release version Project Server is right now.
Hotfixes are generally issued quickly which changes the Project Server.

You can always search support.microsoft.com for Project Server's latest
hotfix and get the version number from there.
