Where DB Server Name is Specified

Does anyone know when in a setup where there is a database server and
an application server, where the database server name is specified? I
will be needing to point our application server to a copy of our
database server on an upgraded machine but cannot find where this is
specified.

Project Server 2003 or 2007? Very different answers.

In 2007, it's specified ~ 5 different times, depending on the database
that is being specified. SharePoint databases, Content databases,
Project Server db's, reporting db's &c.

In 2003, it's specified during the installation and can later be
changed using the editsite tool from Microsoft.

Oh, and don't forget that it can be specified for the OLAP cube
creation and views as well. (At least 2007 views default to the
default database server so you don't have to change each one by hand.)
