Where do I put document description?

I am going to have to customize a "template" document (not an actual .dot
template) for various people. Is there a property field or some such that I
can use to describe things like who I did this for, when, revisions I make,
etc?

Look at File | Properties. There are many fields there that you will find
useful (don't overlook the Custom tab).
