where is the "Send Plain Text Only" info stored?

For my 5000 contacts In Outlook, how can I change globally the "Internet
format" from "Send Plain Text only" to "Let Outlook decide the best sending
format". When I export my .pst file to Excel, there is no field containing
that info, so I cannot know which individual contact records I should modify!
