Which office version do we have to install on a server 2003 and which exhange

the recommended config is Office 2003 with Exchange 2003, though version
2007 of both is out to release soon (already in some cases, for Office)

But be aware that you cannot run Outlook on a server that is running Exchange - MAPI conflicts will occur.
