Why do fax numbers show up in address book

For years this has bothered me and it wasn't until this morning when my boss
told me he'd had a few emails not get to their rightful place because he'd
accidently chosen the fax number instead of the email address after he hit
the TO button that I thought I should look into this.

Is there a way to remove them from the address book w/out deleting the fax
number from the contact? I just can't see why those show up like they do.
