Why does my Microsoft word always check spelling in English (U.S)?

No matter how much I try I cannot get my spellchecker to remain in English
(New Zealand) or even English (U.K) it's a constant battle and my
spellchecker will not stop checking in US. I've tried changing numerous
langauge settings but it just won't work.

Start menu, programs, Office tools, language settings...
(depending on your version of Office, you didn't say)
