Why when I cut and paste doesn't it copy exactly like the original

I scanned a document from the Microsoft Office Document Scanning. I'm trying
to copy and paste to another document. It copies it in some weird language or
something. It doesn't matter which program I try copying it to.

Use Tools, Recognize Text, Tools, Send Text to Word. Then copy and paste
the desired text.
