Is there a patch available for Office2003 to provide AES-256 encryption?
Does Office2007 support this level?

Hi Dan,


Office 2007, when files are saved in (Open Office XML) [ECMA-376] support AES encryption. By default, it's 128 bit, but you can
change to 256 bit.

Earlier version (binary) .doc files do not, that I recall, support AES, but there may be 3rd party encryption tools available.
