You can run in compatibility mode which will save as .doc not .docx. You can
also download the converters for legacy versions of Word that will allow
them to recognise and open Word2007 documents.

In fact, when I installed Office 2007 beta, converters that enable Word 2003
to open Word 2007 documents were automatically installed (I left Word 2003
on my computer). Note that any Word 2007-specific features will be lost when
opening/saving the file in Word 2003.
Just to add one more thing.... the new format, docx, is really a zip file.
If you rename the file to have a .zip extension, the main text for the
document will be in word\document.xml, inside the zip file. So, even if you
don't have Word 2007 or the converters, the document isn't completely
inaccessible.
