Word 2007 Set-up

I have Word 2007. everytime I open a new document I have to manually reset
the spacing. How can I set-up the spacing (and other options) one time
without having to do it everytime I open up a new document?

Press Ctrl+Alt+Shift+S

Click the Manage Styles button near the bottom of the Style pane.

In Manage Styles, click the Set Defaults tab.

Does this give you access to all the ones you need?
