I've turned off the arrow keys that select between worksheet or take you to the begging or last sheet. How do I turn them back on?

You may have turned off the display of the sheet tabs...
Tools | Options | View (tab) | Sheet tabs (checkbox)

In xl2007 and xl2010...
File | Options | Advanced | Display options for this workbook | Show sheet tabs (checkbox)
