Wrong charset displayed

HI

When I receive a reply from some of my clients, the charset in the body is
changed in the outlook client ( from 8859-1 to UTF-8 ),and I can only see
some strange characters, when I go to view-source the body is displayed right
and is said to be in 8859-1. Can I foece Outlook to display all my mail in
8859-1 insted og UTF-8 ?
