There was a thread a couple of months ago about this problem <http://www.officeformac.com/ProductForums/Word/1600>.

The same thing happened to me--I created the doc in Word for Mac 2008 and my colleague opened in on her PC with Word 2003. Selected text (text that I had highlighted for emphasis in a different color) appears yellow on her computer.

Is there an update on a fix for this?

There was a recent update that will make the issue a lot less common. Make
sure you have applied all the latest updates to Office 2008.

The issue is not the "font", it's the Theme. Office 2008 does not handle
Theme colour changes correctly. If you avoid Themes altogether, you will
never see this problem.

If you have Themed your Normal template, replace it, and don't Theme it
again.

Avoiding Themes and replacing the Normal template will fix the issue for
future documents. Existing documents with the problem will remain bad. The
internals are corrupted, and about the only way to fix them is to do a
Maggie:

The Maggie:

1. Create a new blank document
2. Carefully select all of the text in the bad document EXCEPT the last
paragraph mark
3. Copy it.
4. Paste in the new document.
5. Save under a new file name and close all, then re-open.

This technique for de-corrupting is known as "Doing a 'Maggie'", after
Margaret Secara from the TECHWR-L mailing list, who first publicised the
technique.

Thanks--I'll give your suggestions a try. Too bad about the Themes--they were a nice feature.
