You should be able to write notes into calender (like a diary)

I want to use Outlook Calender as a diary as well as a schedule, but in a
paper diary you can write notes etc. When I put Outlook Notes into the
Calender it sets up appointments so you get lots of conflicts with times.
Perhaps text boxes in the Calender would be useful.

Perhaps just double-clicking on a day and typing notes in that big white
space that appears is an option for you.

10 out of 10 for sarcasm, unfortunately 0 out of 10 for usefulness. I do not
want to instigate an endless list of appointments which clash with each other.

I don't think Journal does it. All I want to do is to write notes or
comments or aide memoirs or thoughts-for-the-day or retrospective things like
"took cat to the vet today" etc. like I would in a paper diary.

A 1 minute at 0000 isn't going to clash. And one "appointment" provides
plenty of room for a full days set of entries. Perhaps just a little
ingenuity on your part would provide the answer, instead of asking for
yet more "feature bloat" to answer a non-problem?
