Can I make incoming messages from people in my contacts a specific color?

yes, using the automatic format function of views - tools, organize, using
colors for simple rules and automatic formatting button on the right for
more complicated rules.

You can assign a color that will apply to the message in your folder list -
is this what you are asking?

If yes, use the Customize option and click on the Colors option.
