How can I build on bullets to show an empty box then fade into a "checked
box" to show completion of task? Is this possible? Or any other similar
ideas?

Create a textbox with a bullet that's an unchecked box.

Copy it.

Paste it.

Change the bullet to one that has a checkmark in it.

Align it with the existing textbox.

Apply animation.

Depending on the animation, you may not even realize the text is animating
over the existing text.
