I only want to center one sentence in a paragraph but when I highlight it and
center it the entire paragraph gets centered.

Make it a new paragraph all by itself & center it. Just don't have any
space-before/after.

You may find that it doesn't look "quite right" actually centered and that
an eyeball-indent works better.

Do a ctrl+shift after the sentence. Center the sentence. Go to the sentence
below, backspace then do a hard return.
