Change auto underline in Outlook 2003, Word email editor

Savvy & Challenged Office User

When I open a new email message to write in Outlook, my signature text is
underlined. And, as soon as I begin writing my email message, the text
appears in italics and is underlined.

What exactly do I need to reset to correct this problem?
