change the sender of a e-mail

What version of Outlook?

If 98 or 2000, in what mode is it installed (check Help | About Microsoft
Outlook - it will either be Internet Mail Only or Corporate or Workgroup
mode)?

If you're using OL2002 - select Accounts in the new message and select the
account to send from
