Is it possible to setup a signature so the recipient cannot copy a logo from
the signature and save it to their computer.

No. If its viewed on their computer, its copied to their computer. Yo
can't prevent it. There are (stupid) tricks you can try to make i
harder to copy the logo, but you can't prevent a determined user fro
copying it

Would you want someone else controlling your computer? Once you send,
it isn't on your computer anymore and no longer under your control.
