Once a project is going, if a task is completed sooner than anticipated, how
can you get it to readjust the length of the task? do you have to change the
amount of time scheduled for it or is there a better way? This is important
when another task is dependent on the previous one and it is now able to
start...

Michael,

Double click on the task, change percent complete to 100%, and set the
Finish date to the date the task was finished. Project will change the
duration to the actual duration of the task.

To save time, you might want to display the Actual Finish column. Then, you
can just set the value in that cell and save a step.

In the Tracking table of the Gantt chart view, set the Actual Start field to
the date work began, Actual Duration to the time it took to do the work, and
Remaining Duration field to zero.
