cross references to section numbers

My document is very long with multiple sections and
subsections.

I would like to do something equivalent to captions and
cross references for section numbers.
I try to explain myself better: sometimes in the text I
have reminders like "see section 8" and I would like to
link the number of the section to the the text so that if
I put another section in before section 8 so that section
8 becomes section 9 also the reference in the text is
updated.

I know how to do that for Tables and Figures and Equations
using captions and cross references, but I don't seem to
be able to just cross-references number in the text
together.

Are you referring to sections in the sense of chapters or what Word calls
sections? If the former, provided you have used a numbered heading style to
number the section/chapter, you can use Insert | Cross-reference to
Paragraph number of Heading/Numbered item. If the latter, you'll have to
insert a Section field somewhere in each section, bookmark it, and then
insert a cross-reference to the text of the bookmark.
