Is there a simple way of moving specific sent items to a specific folder?

I have managed to copy specific items to a specific folder, but this results
in 2 copies of sent items and the mailbox file becomes very large.

Any help would be appreciated.

What you need to do is:
- turn off Outlook's option to save sent items to the Sent Items folder
- create your specific rule to copy certain items to a certain folder
- finally create a 'catch-all' rule that will copy the remaining items to
the Sent Items folder (use no selection criteria in the rule - Outlook will
ask you if you really want to use no criteria but it will let you do it)

Also, make sure you don't copy (which leaves the
original) but drag and drop to the new folder.
