How do I set the default tab setting to, say, 10 mm
instead of the "Standard" 12.5"

See if this helps:

1. open normal.dot
2. go to Tools>Options>General. Change units of measurement from inches to
millimeters.
3. go to Format>Tabs. Change default tab stop to 10mm.
