Professional can connect to Project Server 2003 and Standard cannot.

That is the only difference.

The licensing costs should encourage you to get Standard for your users
whenever they don't need to connect to Project Server. I had dozens of
people with Professional who didn't need it, but thought they were getting
something better because it was "professional" instead of "standard".
