Disabling Sites

I need to disable websites without deleting them?
How can I accomplish this?

You might want to check with what the hosting package provides. Sometimes
there are ways to "suspend" hosting accounts without deleting the site.

Another option would be to rename the home page (index.html Default.htm or
whatever it is) to something else. You could then create another home page
that wouldn't allow for any navigation throughout the site (saying site
currently unavailable or something like that)

I just delete the files from the server, saving my local copy of everything,
of course.

What I have done is to create a offline folder at the root
and move all content into it. I then created a new default
page explaining the site is not available.
