Drop down boxes don't show in email

I am trying to create a form for my CS staff to complete several times a day,
that they can email back to me through Outlook. I created through Word, as
this is the only way I knew how. All is fine, except that the only boxes
coming through are the free text form fields. The drop-down boxes don't show
any text. I would appreciate any help, as it is driving me nuts!
