Why does the drop list not show all the names sometimes?

I'll try to explain this, hope you can understand it.

As you type the name you want to send an email to in the "To" box of a new
message window it starts to lists all the names that match the letters you
type in a drop down box. eg. typing "sha" will pull up any names that have a
"sha..." in it.

My Outlook doesn't show all the results of my address book with "sha...".
Does anyone know why this is so? Is there a limit to how many it displays?

Hard to say since you failed to mention your Outlook version. I'll provide a
guess.
You seem to be confused between two different Outlook features.
Autocompletion does not use your Contact data. It uses a cache of names
derived from messages you have sent. Autoresolution (Check Names) will use
your Contacts data.
