can boot in Leopard or Snow Leopard. What do I need to do to have the same experience with Entourage regardless of which disk I boot?

You will have to install Office 2008 on both drives. You can copy over the
Main Identity to both users to start. For details see:

Installing Office on both is by far the easiest way to go. Really!
(There are workarounds but you really don't want to go there).

As far as the use account goes, you *could* use the same account for
both setups. You'd need to specify the path by selecting the user
account in the system prefs and Ctrl-clicking it to get to the advanced
setups.
I usually back this up with a proper symlink in /Users for the drive
that doesn't actually host the user account.
I can attest that it's fairly trouble-free *except* for MobileMe. I keep
on getting annoying sync messages when I log back in Leopard.
