Is there a way to export your resource data that include the resource name
and the workhours by date spread across a specific time period? i.e. the
following:

Yes and depending on which version of Project you are using, you might
have three or four options.

The first and perhaps easiest option is to use the "analyze timescaled
data in Excel" utility found on the Analysis toolbar. Start the export
from the Resource Usage view and apply the Date Range filter.

If you are using Project 2007, you can use the Visual Report utility. It
creates an Excel Pivot Table from which you can extract the desired data.

With any version of Project, you can export any Project data using a VBA
macro or an SQL query directly on Project's database. The first has the
greatest flexibility with regard to data extraction and formatting.
