File As and other fields blank after saving

Hope someone can help with this annoying and long running issue!

Problem:

Enter a new contact using standard outlook form (ipm.note) in a Shared
Public Folder (owner permission)
Save
Open again and information in several fields is missing (commonly e-mail,
address and File As)
Type in information again and try to save, get a message "do you want to
save this contact with an empty File As field"
It does eventually sort itself after a period of time and allows normal
editing with no loss of information
This is an intermittent problem
Users have also reported similar problems in Tasks (Custom form used) and
very occasionally a Calendar entry.

We run Offline Folders
I have tried clearing the Forms Cache
Running a small network of SBS 2003 Server (latest Norton Corporate
Antivirus - correct files/folders excluded from scanning) and 4 XP
workstations running Office 2003. All updates are installed.

I have searched long and hard to find an answer so any help would be useful.
