Font Schemes: How to apply/chang an individual font from the sche

Hi,

Trying to use Font Schemes. I see how to pick a Scheme and apply it to the
document.

But when I'm editing text, I don't see how to choose a particular font from
the scheme. (I.e., if scheme is IMpact, Arial, Arial Black. I want to apply
Impact to the Title of the page, Arial to the body.)

How?
