Not possible. You can have a task start and stop by assigning
resources to it and putting the work in only on the days you want, but
I'd advise against it. Sounds to me like you really have 3 tasks,
unless they're only a few hours each.

Hi,

You can right click over the bar and "split the task" each portion you then
can shift to start on the date you want to indicate. It will of course show
the duration as being from the start of the activity to the finish of the
last split in the bar. It will not show the duration for each split.

Unfortunately the bar retains one colour overall.

Not fully understanding you need...
You can have Start, Start1, Start2... Start10. Same with finish and
duration. Just insert the columns. However, Project will schedule and
respect only Start, Duration, and Finish. The others are for information
only.

Colors are easy; format the cells as needed using Format/Font...
