How can i protect entourage ?

can someone tell me how i can do that?

Unless I am missing something, you don't have to do anything special.
Your email account data is stored on your hard disk as part of your user
data, and can only be accessed by a user who knows your password.

Of course if you leave your Mac running, and don't have a screen saver
with a password, anyone who walks up to it can get at your email and all
your other files.

You should use the account level security that OS X provides. Set up
separate user accounts for each person who will be using the system, and
maybe a shared guest account for occasional users. Make sure that these
accounts do not have admin privileges or they can bypass the security. Also,
turn on passwords for your account and the system account. Don't share those
passwords with anyone.

This assumes the the computer belongs to you and that you have admin access.
If you are a user on someone else's computer, then you depend on their good
will.
