When I choose Modify Selection from the Customise dialog box the last option
is Assign Hyperlink...the Assign Macro option does not appear as it does in
Word XP

I assume we're talking about Tools/Customize, and you're wanting to change the
macro assigned to a toolbar button? As best I can remember, this has never been
a menu option. You need to either select the "Macros" category from the list on
the left, then drag the macro name to the toolbar (and remove the old button).
Or you can use VBA to change the macro assignment. Sample code:

CommandBars("Toolbar name").Controls(3).OnAction = "MacroName"
