How do I change default for view of documents in Windows Explorer

I HATE those little file icons. When I go into Windows Explorer, I want to
see the 'list details' view.

And while we're at it, when I get to the 'details' list, I don't need to see
'Type'; I'm much more interested in being able to sort by date modified. I
can get the 'type' column to disappear once, but I can't see how to set the
default so that I don't have to kill it every time.

You are asking a Windows OS question, not an Office question.

Open Windows Explorer and select any folder. In the icon bar you should see
a multi-color square for view {holding your mouse pointer on a icon should
result in a popup that describes the icon}. Click on View and select
Details. Then click on Tools, Folder Options and go to the View tab. There
you can set all folders the same.

In Windows XP, right click on the column header {any one} and you will get a
list of what columns to display. Do not recall for other versions of
Windows.
