How do I change my name on sent emails?

I want to change the name that appears for my emails as it displays in the
receiving persons "From" column.

Currently my first name appears when they receive an email from me but I'd
like to change it so my Surname appears, any suggestions will be greatly
appreciated

Change your display name in your account properties in Outlook.

When you set up your account you typed in your name. You need to do the same thing again. Tools » e-mail accounts » add or change » highlight the account » properties.
