how do i create an insert name field in a letter?

i'm trying to write a "mass letter" but have it seem personal. How do I do
that? I'd like the {INSERT NAME] feild to disapearexist and then dissapear
each time i type a new name in. I get mass emails every day let appear
person, i know they aren't. How do they do that without having to type a
name into each one?
