How do I direct a hyperlink in a text box to a heading in the doc.

When trying to make text into a hyperlink (in a text box), none of the
headings appear as possible destinations in the 'place in this document'
section.

Try converting the text box to a frame before you create the hyperlink. You
do this by right-clicking on the edge of the text box, then left-clicking on
Format Text Box | Text Box tab | Convert to Frame.
