How do I format the first paragraph after a page break in Word?

The first paragraph after a page break is automatically set to the style of
the paragraph of the previous page.

Not exactly true. The page break itself has the same formatting as the
paragraph following it; there is no way around that. And you need to make
sure that you have a paragraph break before the page break (but recent
versions of Word ensure that by putting one in if you failed to). You can
change the format of the first paragraph on a page, but the page break
formatting will follow. If that is a problem, format the paragraph as "Page
break before" and delete the page break.
