How do I make text default to black? (New text starts out red)

When a new text box is created, it has a red font and I have to change it to
black. How do you set the default color of a new text box?

You can try changing the font color within the style. To do so you need to
select Format menu -> Styles and Formatting then click on highlighted style
and select "Modify..." option. In the modify option dialog select "Font" and
change the color to black.
