How do I set so selected letters are deleted when I retype?

I want to type something, then select part of the letters (like if I make a
mistake) and then start to retype the corrections and have the selected
letters delete.

You want Typing Replaces Selection. From Word's menu, choose Tools -
Options - Edit, and click to enable that option (should be at or close to
the top left).

Or just hit the Insert key (or double click on "OVR" on the status bar) to
toggle the setting.
